Show Us Your Life: Southern Cornbread Stuffing


This week's "Show Us Your Life" from Kelly's Korner is all about Thanksgiving recipes and traditions. My all time favorite Thanksgiving treat is Southern Cornbread Stuffing! Yummm!



Southern Cornbread Stuffing

Ingredients:

Cornbread, (recipe follows)
7 slices oven-dried white bread
1 sleeve crackers, (recommended: Saltine)
8 Tbsp. butter
2 cups chopped celery
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 tsp. sage, (optional)
1 Tbsp. poultry seasoning, (optional)
5 eggs, beaten


Cornbread:
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 Tbsp. vegetable oil
Directions:
Preheat oven to 350 degrees F.

In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside.
Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 to 60 minutes.


Cornbread:

Preheat oven to 350 degrees F.

Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.

P.S.- Dog Name Update: You guys all had such good suggestions! My favorites were Lucy, Chloe and Annie and I would have been happy with any of those. However, my little brother back home really wanted to name her Lola and since he will actually be the one living with her and my parents...well, Lola it is : )
And doesn't this collar just look like something a Lola would wear? Ha!

  3. My grandmother makes cornbread stuffing. It's my absolute favorite on Thanksgiving!!! Well, that and her homemade rolls. Sadly, I miss Thanksgiving w/ my family b/c of football season and living too far away.

  9. I love the name Lola. So cute! I never experienced the Southern Cornbread Dressing until about 5 years ago. My mother always made stuffing (and I have to say I'm obsessed with her stuffing). The first year I ate with my boyfriends family I was a bit put off by not having stuffing, and having "dressing". Three bites into it I was sold. It will never replace my favorite stuffing but it's darn close! SO delicious. Last year my boyfriend and I had Thanksgiving with our friends and he made his mom's stuffing and I made mine. Thankfully everyone loved both! (and the battle of North and South could rest another day) ;) haha

I am loving the corn bread (I am a total soul fooder) and how cute is that dog collar? Unfortunately, my dog is a boy- but the next one will be a girl, hands down!
